Almond and Sunflower Muesli

This is a traditional German breakfast I learned when I lived in Munich for a number of years. 

Ingredients, serves 2

70-100g mixed nut and seeds e.g. almonds and sunflower seeds. Pumpkin seeds with Brazil nuts work well too.

1 apple or other fruit, roughly chopped or grated.

Cinnamon or mint, optional.

Method

  1. Soak the almonds and sunflower seeds overnight in filtered water.
  2. In the morning drain and rinse the nuts and seeds in a sieve and add to a small food processor or chop up by hand.
  3. In the food processor, add fruit and pulse a few times to combine. If working without a food processor, grate or chop the fruit and stir through.
  4. Add some cinnamon if desired and enjoy as a muesli.

TIP: Larger quantities makes it easier to chop in a food processor. Small amounts may just be thrown to the sides of larger processors. A wide bowl food processor actually works best for this as it incorporates more air into the mixture which keeps it chunkier and prevents the mixture from pureeing.
