Beetroot soaked oats

Beetroots are a superfood in their own right, and are much cheaper than freeze dried berries such as acai or gogi. Beetroots are rich in anthocyanins (which give them their beautiful colour and have powerful antioxidant properties) and also natural nitrates which work as vasodilators in the body.

Ingredients

35-50g oats

1 tablespoon sunflower seeds

1 teaspoon beetroot powder

3 parts milk to oats

Handful of blueberries

Method

  1. Soak the oats, beetroot powder, sunflower seeds and milk together overnight in the fridge
  2. In the morning adjust the thickness by adding more milk if necessary. Decorate with blueberries.
  3. Enjoy!
