Creamy Lemon Ice Cream—vegan, no churn, instant

This is a quick, four ingredient ice cream that is ready instantly and does not need freezing or churning. This is because 3 of the ingredients are already pre-frozen. The result is a super creamy and soft ice cream, but it does need to be served immediately as it will start to thaw out fast! It is really lemony in flavour and tastes amazing.


250g frozen cubed mango
60g frozen coconut milk (from a can, frozen into ice cube trays!)
1 frozen banana
Juice and zest of 2-3 lemons


  1. Whizz together in a strong food processor for 1-2 minutes.
  2. I then use a whisk attachment in the processor and whisk at a low speed to incorporate some more air and make it lighter and creamier.
  3. Serve! Immediately or pop into the freezer.

*Note if you put this back in the freezer it well set quite hard. If you want to eat this at another time, take out of the freezer for 10 minutes and pop back into the food processor and process again.
