SNOWBALLS

These snowballs are a great treat. They contain no added sugar, but do contain natural sugars in the dates or figs. I like to used soft dreid figs in mine as I think they can give a more gooey texture, but Medjool dates are also a great choice. Each Powerball contains around 130Kcals, 3.7g protein, 8g fats, 12.5g carbs, of which 3.5g is sugar, 50mg calcium, 1mg iron, 55mg magnesium and 3g fibre.

Ingredients, makes 20 balls
250g soft fried figs or Medjool dates
200g ground almonds
20g chia seeds
2 tablespoons almond butter
25g coconut flakes (plus 25g for decorating)
pinch Himalayan salt
few drops vanilla extract/ paste

Method

  1. Add all of the ingredients to a food processor and process until the mixture comes together when pressed betbeen two fingers.
  2. Roll the mixture into small balls and dip into the flaked coconut to coat. The mixture should hold its shape easily when rolled and should not crumble. If the mixture is crumbly or dry, simply add a tablespoon of coconut oil or two more figs/ dates and process again for a few seconds. This should bind it together better.
  3. Store in a glass jar in the fridge. These will easily last 7-10 days in a sealed jar.

TIP: These Snowballs can easily be frozen.
