The vibrant pink colour here comes from pitaya powder. This is made from the dried red dragon fruit which has the most gorgeous pink flesh. The powder is available from health food stores and online and gives everything it touches a vibrant pink colour.
200g Medjool dates, stoned
150g ground almonds
1 teaspoon cacao nibs
1 tablespoon Pitaya powder (dragon fruit powder)
250g dark or white chocolate
To decorate: chocolate hearts and edible glitter
- Add all the ingredients (except the cacao nibs) to a food processor and process until smooth. The mixture should stick together when pressed. If not, add a couple more dates. Stir in the cacao nibs at the end.
- Roll into small 15g balls and freeze for at least 2 hours to get them really cold.
- Melt the chocolate gently in a bowl over a simmering pan of water and dip the frozen balls in. The chocolate should freeze instantly. Decorate as you choose
