Lightly flattening the fillets and cooking them slowly with a lid on allows steam to build, preventing the meat from drying out. It is a method worth mastering, as it transforms an everyday ingredient into something far more enjoyable. Served with plenty of vegetables, this makes a balanced, satisfying meal.
