Which oils should we use in cooking? I get asked Which oils should we use in cooking? 
I get asked this question a lot. I'll start by telling you what I don't eat. I am still trying to leave the vegetable oil experiment....but it’s not easy as the food industry put it in EVERYTHING because it is cheap and abundant. 
This is where I do not agree with government guidelines. I am just looking at the science which seems to be screaming the opposite. 
Sunflower oil, cotton seed oil, rapeseed oil etc. are what we call seed oils. They require pressure, heat, solvents such as hexane, and deodorisers to extract the oil and make it fit for human consumption. They are rich in polyunsaturated fatty acid PUFAs, which scientists speculate might be good for our health. 
Olives, in contrast, are pressed gently to release their oil. Olive oil is rich in MUFAs or monounsaturated fatty acids. These are more stable and form a large part of the Mediterranean diet, recommended by thousands to lower heart disease risk. 
In the USA approximately 30% of calories come from vegetable oils equating to around 1000kcals per person per day. Latest figures show that in 1920 our fat stores compromised just 5% of PUFAs. We now have 6x as much PUFA in our body fat, but is this good for us?
Olive oil contains MUFA's but is also a rich source of polyphenols and antioxidants which give it its' vibrant green colour and bitter flavour. These compounds protect the oil from damage. 
Vegetables oils are unstable and sensitive to light and heat, meaning that they oxidise when we cook with them to form toxic compounds. They lack the antioxidants there to protect them from damage. 
PUFA rich oils are rich in Omega 6 fats. While we need these for health, we only need small amounts. The problem is that Omega 6 fatty acids drive inflammatory pathways in the body. Omega 3 found in fish oils with smaller amounts in flaxseeds or chia drive anti-inflammatory pathways. We need to eat both these fats in BALANCE. However, we are currently eating more Omega 6 than we need and not enough omega 3. We used to eat a ratio of around 2:1 (omega 6:3), yet many of my clients have levels over 10:1 and some over 40:1

It really is. I’m not bragging (okay just a litt It really is. I’m not bragging (okay just a little bit) but I haven’t seen another programme like this on the market which also makes me realise that this programme is already unique! And while I’m waiting for the right book deal to come along and landed on my lap, I will continue to offer it as a complete online nutrition, lifestyle and weight loss programme.

This is not how we are being told to eat as a nation. Yet as nation we have a problem where around 66% of the population are overweight or obese. This statistic also includes our children.
The government is still using outdated advice on choosing sugar free, low-fat processed foods, as well as making sure that the majority of our plate is covered with carbohydrates, often refined.
We are fully encouraging to consume ultra processed breakfast cereals, or highly processed bread and scare-mongering us into eating low-fat houmous, low-fat spreads, sugar-free squashes and drinks.
The problem is that these foods are being marketed as ‚food‘. To me these are ultra processed, chemically altered foods that are no longer in their natural state. 
How can a food such as yoghurt with 3.5% fat become demonised. It is almost impossible to buy full fat yoghurt. Instead we are confronted with watery alternatives thickened with starches and gums. Where is the sense in this? Particularly as it is the fats that keep us full up. 
Does this mean we should eat a low-fat yoghurt (preferably full of sugar too) for breakfast only to eat a muffin at 11 o’clock because it didn’t fill us up? Sorry, This to me is utter nonsense. 🤐

This is my spicy peanut dip which made another app This is my spicy peanut dip which made another appearance. These Vietnamese rice rolls were filled with Julianne vegetables and tofu or cooked salmon. I couldn’t decide, so I had both.
These were perfect where is this spicy sauce. A serving size for this sauce is around 50g per person. 🥸 Good to know. 
I think I will make a few posts on delicious and healthy salad dressings. The reason being, if you have a few gorgeous dressings stored in your fridge (jam jars make perfect containers) you can jazz up just about any vegetable or salad. 
You don’t need to worry about the calories so much, because when they are made of healthy ingredients containing healthy fats, proteins and natural ingredients they work to help control our appetite, in the same way as food. This means, they sustain us for longer as part of the meal. The most important thing is not to keep snacking between meals. But, in order not snack between meals, you have to feel full up from your previous meal.
If you are somebody that struggles to eat 5 to 8 portions of vegetables and fruits daily, this can really help to increase your overall vegetable intake. Take a look at my salad from yesterday. It did serve 4 people, but I included 300 g broccoli, two bell peppers, quarter of a cucumber, half a red onion, 200g tomatoes. This added up to nearly 1000 g (1 kg) of fresh vegetables and  excluded the Edamame beans (which I class here as a protein). This equates to 250g per portion, which in my mind is the perfect portion size.

Quinoa, edamame, walnut and pumpkin seed salad wit Quinoa, edamame, walnut and pumpkin seed salad with a spicy peanut dressing. The easiest way to eat more vegetables is to make a delicious dressing! 
Spicy Peanut Dressing
Ingredients
4 tablespoons peanut butter
2 tablespoons Tamari
thumbnail sized piece fresh ginger
1 clove garlic
2 tablespoons apple cider vinegar
1 tablespoon toasted sesame oil
2 tablespoons siracha sauce
juice of 1 lime
250ml water 
Method
1. Add all the ingredients to a blender and blitz until smooth and creamy. 
Stores well in the fridge in a sealed jam jar.

🥑 You increase the amount of nutrients you consume. This is particularly important minerals in the diet.
🥑 Increasing the diversity of plant foods in our diet nourishes and feeds a our microbiome.  it’s true, different bacteria like to eat different types of food. Eating a wide range of foods can improve the diversity and number of strains of our own Microbiome. The more diverse are Microbiome, the more healthy and robust it becomes.
🥑 These added foods also help to solicitor for longer. This is important if you don’t want to be rushing to the fridge or cookie jar two hours later. It’s better to eat more at your meals than snack in between. Why? Because we only want to raise our blood sugars once and then let them tail off and fall gently. Every time we eat food we raise blood sugars and insulin. Long-term this can encourage weight gain and disrupt our appetite.
I start with a good protein powder, such as @rawsportofficial As I use top-notch ingredients and they don’t raise your blood sugars. This is better than adding a fruity or banana base which will skyrocket your blood sugars! I like collagen plus, because it’s made more for women.
