Spiralised Vegetables

It is possible to replace pasta with vegetables in many recipes. A spiraliser is not essential, as vegetables can be grated or cut into ribbons using a simple potato peeler to create tagliatelle style strips. Many supermarkets sell ready spiralised vegetables, but it is worth noting that pre-cut vegetables may have lost some of their water soluble nutrients. Grated or spiralised vegetables do not require cooking, but they benefit from being gently warmed so they do not cool the dish. This can be done quickly in a pan with a small amount of vegetable stock, using just enough to prevent sticking. Warm the vegetables briefly, stirring until heated through but not softened, so they retain their shape and an al dente texture. Alternatively, the vegetables can be stirred directly into a hot sauce on the hob to warm through. When using vegetable based noodles, ensure the sauce provides sufficient protein and additional vegetables to create a balanced and satisfying meal.
