Charred Brussels Sprouts with Cottage Cheese, Pistachio and Pomegranate

Brussels sprouts are often overlooked, but when cooked well, they become nutty, sweet, and deeply satisfying. In this recipe they are paired with cottage cheese for protein and finished with pistachios and pomegranate for texture and freshness. It is an easy, nourishing dish that fits neatly into the Renew Reset Recharge® framework while still feeling generous and complete. I have used 150g of cottage cheese per serving here to top up the protein; you can use between 250–350g in total, depending on your amounts. This will be roughly double your usual amount of cheese, as it is much lighter and less filling.
