Cauliflower Tabbouleh

This is a great alternative to tabbouleh. Traditional tabbouleh can be very healthy, but when we are keeping meals well balanced for weight loss, cauliflower makes a useful substitute for bulgur wheat. I happened to have some miniature cucamelons growing in my garden, which I added on top. They are not something we often see in supermarkets, but they taste like a lemony cucumber and look like tiny watermelons. They are included purely for fun and decoration here and can easily be left out or replaced with extra cucumber.
