Cypriot Lemon Bean Soup
This is a simple, nourishing soup built around whole beans rather than puréeing them into the base. It is inspired by a traditional Cypriot dish, Fasolada, often enjoyed at lunchtime with a generous drizzle of extra virgin olive oil and fresh bread. Here, the beans remain intact, giving the soup substance and texture, while lemon brings brightness and balance.
I have included kale for added greens, though it is optional. Thanks to the combination of fibre and protein rich beans, this soup is particularly satisfying and works well as a standalone meal when weight loss is the goal. This soup includes your protein as beans.
