Grain and Lentil healthy carb mix

I came up with this idea while trying to think up ways to increase plant points at our meals with blood-sugar-friendly grains. Having some of this mix cooked up in the fridge and ready to go means you can add it to salads and soups, or enjoy it as a side dish. The simplicity comes from the fact that all these grains and legumes cook in around 25 minutes, meaning that it is possible to cook them all in the same pan. This is a fantastic way to bring healthy carbohydrates into your meal, to sustain you for longer. Black beluga lentils contain high levels of polyphenols, which give them a darker appearance, and since different types of lentils count as separate plant points, this mix makes it an easy way to boost yours! At 6g of fibre per serving, it's also a genius way of topping up your fibre. To make this gluten-free, use buckwheat groats, quinoa, black lentils, Puy lentils, millet or amaranth.
