Red Lentil Bagels
This is one of my most ingenious bread recipes. Most people are amazed to discover that these bagels are made from red lentils. The result is a bagel that keeps you fuller for longer, has a beautiful texture and tastes far better than most supermarket bagels.
These bagels are gluten and wheat free, high in protein and fibre, and are a great way of adding around 8g of fibre to your plate. They can be used as a carbohydrate swap at meals or, as shown here, as part of breakfast. You can also adapt the recipe to make six.
