Penne Puttanesca
This recipe puts pasta back on the menu again and is a healthy pasta swap. Substituting the pasta for a higher protein and fibre alternative is an absolute game changer.
Most supermarkets now stock red lentil and green pea pasta.
You can use red lentil, green pea or yellow pea pasta. I think this works best with ZENB pasta which is made from 100% yellow peas with 12g fibre / 100g and 21g protein and it has a neutral flavour. You can also use traditional pasta if you prefer.
