Spiced Halloumi and Chickpea Salad
I love this salad as a quick lunch idea. I like to mix the halloumi and chickpeas to elevate the protein and the fibre. You can also use the chickpea and halloumi mix a topper for a vegetable soup. For other family members (not on the programme) they are welcome to pop this into a wholegrain wrap. I used a mix of cooked vegetables and raw salad, so feel free to use what you have at home.
