Sunshine Soup – Carrot, Butternut, Orange, and Turmeric

This is a light, yet deeply warming soup that feels restorative without being heavy. It came together from a combination of vegetables and fruit that are often on hand in my kitchen, and has since become a reliable comfort recipe. Carrot and butternut squash provide natural sweetness and body, while orange lifts the flavour, and turmeric adds warmth. Freshly ground black pepper is important here, as it supports the absorption of turmeric. A small amount of cashew nuts gives the soup a gentle creaminess without the need for dairy.
