Cosy Courgette Oats

I love sneaking in vegetables into breakfast and this is no exception. Adding courgette or zucchini to your oats has a few benefits. Firstly it bulks up your meal, which means that you feel fuller for longer, and it also squeezes in a little more fibre. I have added an egg white to this to boost the protein. This is a big bowl of food believe me for 320kcals. If you don’t like the idea of using egg white (you can’t taste it, I promise), then add a little more Yogurt or Skyr at the end. I used oat bran which has more protein and fibre than regular oats and cooks in just a few minutes. You can also use regular rolled oats, if preferred. I have avoided sweetening this to keep the sugars down, after a while your taste buds should start to change and you may find you naturally need less sugar.
