Cod served with a Tomato, Ginger and Garlic Sauce

This fish dish combines several vegetables into a gently spicy, flavour-packed sauce. If you enjoy white fish but sometimes find it bland, this recipe is for you. If you would like to include wholegrains, you can stir cooked green lentils into the green vegetables or into the sauce itself, which will also boost the fibre content. This sauce also works well with chicken, prawns and tofu for alternative proteins.
