Wake-Up Mocha Balls

I made this recipe up because I fancied a treat and a cup of coffee at the same time, so thought I would combine the two! These balls are best eaten straight after a meal, rather than as a snack. This way they will have less of an effect on our blood sugars. They are wake up because I have added a small Espresso shot, cacao and cacao nibs, which combined, contain the natural stimulants caffeine, theobromine and theophylline.

I also added some MCT oil which stands for Medium Chain Triglycerides. This is a part of coconut oil that is thought to enhance energy, metabolism and mental agility. This is because this particular chain length is thought to pass easily into our mitochondria (cellular energy factories) to increase our energy levels.

Ingredients

150g ground almonds
50g gluten-free porridge oats
250g Medjool dates, pitted
40g raw cacao powder
1 small shot of Espresso (around 30ml)
2 tablespoon MCT oil or coconut oil
2 tablespoons cacao nibs
10g chia seeds
pinch salt
pinch sea salt

Method

1. Add all ingredients, apart from the cacao nibs, to a food processor and process until combined. If the mixture is too dry add an extra date or a little more oil and they should
stick together perfectly!
2. Stir in the cacao nibs and roll with slightly wet hands into medium sized balls (approx 15g each).
3. Store for up to a week in a sealed jar in the fridge.
