Black Bean Shakshuka

This is a fun take on the traditional Shakshuka. It is packed with fibre and protein so it will fill you up and you’ll be less likely to think about food between meals. It also makes a fabulous brunch or lunch.

I have cut the portion size to serve 2 but it is easily doubled for a family meal or for leftovers.
