Breakfast Egg Muffins with Smoked Salmon and Goat’s Cheese

These egg muffins are simple to prepare and ideal for busy mornings. They work particularly well if you are intermittent fasting, as they are easy to take with you and provide protein without heaviness. They are also a useful make ahead option to keep in the fridge for a few days. If you are being strict with Renew Reset Recharge® and continuing with weight loss, stick to a plain egg base and leave out the cheese and salmon. A lightly spiced curried version also works well, using turmeric or curry powder instead.
