Butternut, Chickpea, Feta and Rocket Salad

This is a great salad to enjoy even in the colder months. The butternut squash becomes sweet and caramelised, and the turmeric dressing gently warms the salad. Butternut squash contains slightly more carbohydrates than some other vegetables, but when teamed with the rocket, it is a winning combination. I have added fruit to this dish, which adds additional Levantine flavours, but is optional. Use the cooked lentils as your healthy carb, if using at this meal. This is a great salad for leftovers, and is one of my Make-One-Take-One recipes.
