Cauliflower and Chickpea Curry
This is a deeply satisfying plant based curry that is full of flavour, fibre and texture. Roasting the cauliflower and chickpeas first gives them a richer, more savoury edge, while the broccoli rice keeps the dish light and balanced. It works well for batch cooking and is equally good the next day, making it a practical option for busy weeks. You will notice that the protein is always lower when we rely on legumes for protein.Can be made plant based using a plant based yogurt e.g. soy Greek.
This dish is high fibre, due to the broccoli. cauliflower and chickpeas. If you stuggle with fibre, maybe pass on this dish or swap the broccoli for white rice or make the portion sizes smaller.
