Easy Protein Packed Eggs

Eggs are a wonderful, nutrient-dense food and a great source of protein. However, they are not as high in protein as some other foods. This is why, on RRR, we often like to pair eggs with a second protein source such as cottage cheese, Greek yoghurt, smoked salmon, feta cheese or chicken to help top up the protein at breakfast. This makes the meal more satisfying, more balanced and helps to support stable blood sugar levels throughout the morning. You can enjoy your eggs however you like them — poached, scrambled, boiled, sunny side up or made into a fluffy vegetable omelette. Adding plenty of vegetables naturally boosts the fibre and volume, making this a really filling, energising start to the day. You may be satisfied just with 2 eggs and colourful egg ‘soldiers’. We are all different so see what works best for you.
