Feta Soufflés

This recipe takes just three minutes to prepare and cooks while you get on and make a salad. Simple, fast and my sort of fast-food. I often double the recipe and keep one back for lunch the next day.

Traditionally soufflés are quite tricky to make and involve a lot of whisking and some skilled kitchen work.

It is however possible to make them quicker using this simple method. The only thing I would not skimp on is the bain-marie* This is a must.
