Getting Ready Roasted Veg

Having some roasted vegetables means that you can use them as a side dish to chicken, fish, cheese, eggs or tofu and they make a great base for salads. You can eat them at room temperature, heat them up or even add vegetable stock and turn them into a soup! They are so versatile. You can make an orange veg version, spiced cauliflower or the carrot, onion and beetroot that I use for one of the salads.
