Grilled Mackerel Fillets with Beetroot Fennel and Pear
This is a versatile, Mediterranean style dish that works equally well with fresh, frozen, tinned or smoked mackerel. Pear can be swapped for orange if preferred, and the potatoes can be replaced with lentils or grains. If protein and fibre are the priority, swapping the potatoes for green or black lentils works particularly well. I had some oven-cooked potatoes as leftovers when I made this dish.
