Raw Beetroot, Carrot and Apple Salad
Beetroot is a root vegetable that is rich in plant compounds called anthocyanins. These are the bright red pigments that act as antioxidants in the body and also have anti inflammatory properties. Beetroot is also a good source of vitamin B9, also known as folate, as well as natural nitrates, which can support healthy blood pressure. Beetroot can be eaten cooked or raw, but in this salad I have gone for raw to make it quick and easy.
