Roasted Orange Vegetables
What I love about this recipe is that you can easily increase or decrease the carbohydrates to suit you. If you are reducing carbs, simply leave out the sweet potato and increase the amounts of carrot and butternut squash instead.
These vegetables make a great base for fish or chicken, and they also work well as a quick lunch topped with a couple of poached eggs and a side of cottage cheese.
You don't need to peel the butternut squash as the skin is edible, so it is down to personal choice. Carrots can be scrubbed and don't need to be peeled, especially if organic.
