Salmon with a Quinoa, Lemon and Walnut Crust
This is one of those quietly impressive recipes that never fails. It is simple to prepare, works just as well for a midweek meal as it does for entertaining, and can be enjoyed hot or cold the next day. The combination of salmon, quinoa and walnuts provides a balance of protein, healthy fats and slow release carbohydrates, while the lemon keeps everything fresh and light. You can easily double this recipe and use it on a whole side of salmon if you are cooking for a crowd. This recipe can be easily halved too.
