Scrambled Eggs with Pea and Cottage Cheese Smash
This is a simple, nourishing breakfast that works particularly well when you want something light yet satisfying. Peas and cottage cheese are both naturally rich in protein and fibre, and together they add around 10g protein and 4g fibre to the dish. The result is a clever alternative to avocado, offering creaminess and substance while keeping the meal balanced and blood sugar friendly.
I served this with a slice of my chickpea bread which has 107kcals, 6g fibre and 5g protein per slice. You could also use 1/2 of a red lentil bagel or keep it simple and have your allowance of seeded sourdough.
