Souvlaki Chicken Kebabs

This meal always has a holiday feel to it. The marinade works beautifully with chicken, halloumi or tofu, making it easy to adapt for different dietary preferences. The tzatziki is a carb swap. Greek yogurt supports steadier blood sugar and works perfectly with the flavours of the kebabs. This recipe also makes excellent leftovers for lunch the next day. This also makes a great family recipe (non Renew Reset Rechargers can eat this with a flatbread, potatoes or wholegrains). This is a HIGH protein dish made with chicken, for halloumi the protein is around 37g and tofu around 38g. Chicken and tofu contain the lowest calories. The tzatziki is used here as a carb swap, replacing grains or avocado. Greek yogurt tends to support steadier blood sugar and works particularly well with these kebabs. If making tzatziki, you usually do not need the dressing as well.
