Turmeric and Coriander Omelette

This is an Indian inspired omelette. As eggs contain protein but no fibre, I have added in some flaxseeds to give it a little boost, you can omit these if you prefer. Doubling the vegetables is an easy way to boost fibre, volume and satiety without adding many extra calories, but I have kept the oil deliberately low. Use a non stick pan for best results. I have used 200g vegetables in this; choose any vegetables you like from mushrooms to spinach or peppers and onions.
