Vegan Chili with Cauliflower Rice

This recipe makes a lot of portions and is a fantastic make one freeze one choice on Renew Reset Recharge. If you dont have any cauliflwer, you can pulse or grate broccoli or carrots too. I often sesrve this chili with frozen garden peas. Did you know that 100g peas contains around 5g protein and 5g fibre so this is a great way of topping up both of these in the diet. Peas make a great alternative to rice as they also support better blood sugar control.
