Vegan Chocolate Tofu Mousse

This recipe has gone viral. I tried various versions, but was very unimpressed with it’s wishy-washy flavour, so I gave it an upgrade to make it richer, creamier and much more indulgent. Raw cacao powder actually packs a punch with 30g fibre per 100g and 27g protein per 100g. I wonder if I should have hidden it in more recipes!

Ingredients

200g silken tofu
100g melted dark chocolate
30g tahini
2 tablespoons cacao powder

To decorate
raspberries and pistachio nuts

Method

  1. Melt the dark chocolate in a heatproof bowl over boiling water, or in the microwave. Allow to cool slightly.
  2. Add all the ingredients to a food processor and process until smooth.
  3. Pour into 4 small ramekins or glass jars and pop into the fridge to set.
  4. Decorate with raspberries and pistachio nuts and serve.
