Strawberry Quark Layer with Chia

Quark is something I got to know during my time living in Germany and it remains one of my favourite ways to anchor a meal with high quality protein. It is virtually fat free, beautifully creamy and far more filling than many people expect. When you pair it with a chia layer, you are adding both soluble and insoluble fibre. The soluble fibre forms a gentle gel in the gut, helping to steady blood sugar levels and keep you satisfied for longer. You may find this lacks sweetness at first, as we are often used to our food tasting much sweeter than it needs to be, and it can take time for our taste buds to adjust. Over time, you begin to notice the natural flavours in your food more clearly, which means you naturally need less sweetness overall.
