Oven Roasted Vegetables

Roasted vegetables can be cooked in bulk and used in a number of different meals. You can serve them as a side vegetable, cook with chicken or chickpeas to create an entire dish or even serve with mozzarella. I have also eaten them mixed with tiger prawns over courgette pasta. You can be a bit more generous with the extra virgin olive oil for weight maintenance when you reach your goals. Roasted vegetables shrink down quite a lot on cooking, but as these are lighter vegetables, I have increased the serving size slightly to compensate.
