Simple Greens

Cooking vegetables does not need to be complicated. In winter, you can simply cook your greens in a little extra virgin olive oil with some vegetable stock. While you can make your own vegetable stock, I am also a fan of vegetable bouillon powder, which lifts vegetables quickly and gives a rounder, more savoury flavour than salt alone.
