Spicy Tofu Noodles

Tofu is the perfect food for taking on flavours, especially those used in Asian or Japanese cooking. This can transform tofu into the star of the show and makes a delicious mid week meal. I like my tofu to be crispy around the edges and soft inside. As a bonus, tofu is rich in plant polyphenols called phytoestrogens as well as calcium (if calcium set), and iron.
