If my poll is anything to go by, lots of you are struggling with tofu. Let’s be clear, tofu tastes of water on its own, but is like a sponge and absorbs flavours brilliantly, especially Japanese and Asian flavours.

I also think tofu tastes better crispy and either lightly fry mine in sesame oil or poppet in the air fryer or oven. Everyone likes crispy on the outside and soft in the middle, don’t they?

So this tofu noodle recipe pack of punch.

Tofu with noodles, serves 4

Serves 4

1 x 280g pack natural tofu

Marinade
50ml Tamari soya sauce
2 teaspoons sriracha
5cm grated ginger
3 garlic cloves, crushed
1 tablespoon sesame oil

160g of noodles ( I used ZENB yellow pea, but you could use edamame or back bean)

1 tablespoon sesame oil
1 leek
1 bunch cavolo Nero, de-stalked and chopped
2 bell peppers, finely sliced
100g edamame beans, frozen

1 handful coriander, chopped

25g roasted peanuts, crushed

Method
Mix the marinade ingredients together. Use half for the tofu marinade and half for the noodles mix.

Cut the tofu into squares and Pat with kitchen paper to remove excess water.

Use half the marinade over the tofu to coat each square evenly.

Either cook the tofu in an air fryer for 12 minutes at 180° C or fry in a tablespoon of sesame oil on each side until
Crispy. This will take around 8 minutes.

Heat a large saucepan with water and add the noodles. Cook as per pack instructions. Add the frozen edamame at the end of cooking so that they simmer for 3 minutes with the noodles. Drain and rinse well to prevent noodles sticking.

Heat a large frying pan or wok heat 1 tablespoon sesame oil. Add the sliced leaks, garlic, and peppers and fry for 5 to 6 minutes until softened.

Add the cavolo Nero. And the extra marinade. Stir through the noodles and add a little extra water if required.

To serve cover with the chopped coriander, crushed peanuts and the crispy tofu.

This morning‘s breakfast was delicious. I took my yoghurt and topped it with grated, frozen, watermelon and some fresh in from the garden. The watermelon just tastes like sorbet and the Greek yoghurt like cream. I think I’m going to be eating variations of this all summer.

This turns your breakfast into a dessert which is not really refreshing and also feels really indulgent.

I’ve got a few fruits lined up in my freezer to try this with, but I think it will work well with all of them. Here are a few I have already tried.

🍑 Ripe peaches with pistachios ✔️
🥝 Ripe Kiwi with lemon zest ✔️
🍉 ripe watermelon with mint ✔️

Simply freeze your fruit at peak ripeness and then great over your yoghurt of choice.

Add some runny peanut butter if you fancy it, 9or some extra nuts. In fact, I was tempted to put a Cadburys Flake in the top it was so good!! 🙊

I haven’t done any bloopers for a very long whil

I haven’t done any bloopers for a very long while. But I decided it was probably about time to put some silly shots in because quite honestly my reels do not always work out perfectly.

For each 90 second reel, I might need to take around 10 takes to get anything that sounds coherent! And then of course, there is the editing and the caption! Luckily, I love what I do and enjoy slotting Instagram into my daily routine.

Making reels takes time, especially if, like me, when this is a side hustle to my main job! And because it’s hard to make quality reels on a daily basis, I sometimes need some slack to just be myself too.

As you can see, there’s lots of silliness that goes on behind-the-scenes, unfortunately it’s usually only my dog who gets to enjoy the fun and see me laughing at my own mistakes.

Anyway, this one’s a lighter for those of you who need something to smile about today xx

I do realise this is quite obsessive, but also enjoy having them in my kitchen.

I’ll probably only keep this up for about 24 hours as I doubt it’s one of my most interesting reels.
