Pea Hummus

Pea Hummus

A fun take on traditional hummus. The peas make this hummus light and creamy. It works well with white fish, bean burgers / falafels, salmon, tofu and even cheese. As an accompaniment, a dip or on some sourdough. It can even be your protein part of the meal if you like. Peas are a PULSE!

 Ingredients

300g frozen petit-pois peas

2 cloves garlic

1 tablespoon tahini paste

1 tablespoon EVOO (extra virgin olive oil)

25ml fresh lemon juice (Sicilian lemon juice is the best)

½ teaspoon Himalayan salt

pinch chilli flakes

a few chopped chives (or other green herbs)

pinch of chilli flakes

 Method

  1. Defrost peas by popping them in a bowl and covering with boiling water. Wait five minutes and they will be both chilled and defrosted. Genius! Drain them in a sieve.
  2. Add all the ingredients to a food processor and process for around sixty seconds until smooth.
  3. Serve as a dip, an accompaniment to fish, cheese, beans, tofu or chicken or even as a vegetable side dish.
