
This soup is one if my lunches from my Renew Reset Recharge® Programme. It’s a great way to make soup a filling lunch option. The problem with just eating soup and bread is that it doesnt fill you up because soups usually are a great source of vegetables and fibre, but a poor source of protein. It’s the protein that keeps us full-up and keeps our mood and energy levels balanced between meals. This is where I play with the macronutirents for you and in come the Halloumi croutons (useTofu instead if you are plant based). They not only taste amazing but they provide the missing protein and as a result we eat less bread with the meal. This means the meal is more balanced! Win Win.
