Green Goddess Salad

This is my take on the viral green goddess salad dressing that has been doing the rounds on
social media. So much so, that I have no idea who started this trend, so I put my own twist on
the recipe anyway.
This salad is rich in cruciferous vegetables. These bitter veggies are great for our gut bacteria,
and also support some of our important liver detoxification pathways.

Ingredients, serves 4

Salad
1 whole white cabbage, finely sliced or pulsed in a food processor
1 cucumber, finely sliced
150g radishes, finely sliced
3 spring onions (I used red spring onion)

Dressing
50g cashew nuts
2 garlic cloves
handful of spinach or rocket
handful of 2-3 different fresh herbs e.g. basil, coriander, chives or parsley
3 tablespoons nutritional yeast (20g) or 30g grated Parmesan
juice and zest of 2 unwaxed lemons
50ml extra virgin olive oil
15ml apple cider vinegar
70-100ml water, add slowly
salt and pepper

Method

  1. Add the chopped cabbage, cucumber, radishes and onions to a large bowl.
  2. Mix all the dressing ingredients and blend together in a small blender or with a stick blender.
